4 medium sweet potatoes
2 tsp. cinnamon
1 tsp. salt
1 tbsp. vanilla
6 oz. cream cheese (or soy cream cheese for no cholesterol)
1/3 cup brown sugar
1/3 cup walnuts, chopped (optional)

1. Brush sweet potatoes with oil and wrap in foil. Bake
at 350 degrees until knife can be inserted and
potato is cooked (about 1 1/2 hours.)
2. Unwrap potato, cut in half and scoop out flesh,
leaving a little flesh in shell to make it sturdier.
3. Place cream cheese, scooped out yam, cinnamon,
salt, vanilla, and brown sugar in food processor,
process until smooth. (For a chunkier consistency
you can do this by hand.) Fold in walnuts.
4. Spoon yam mixture into potato skins and warm in
oven until just heated. Serve topped with a dollop
of cream cheese and a few walnuts.
For a nice presentation garnish with mandarin oranges and mint leaves.
